Take a look at these yummy retro ‘pic ‘n’ mix’ fruity cupcakes! Super easy and super fun that the whole family will enjoy! Our friend @sweetpeasbakes has made these deliciously yummy cupcakes that will be a hit in any household!
Ingredients: For the cupcakes
200g self raising flour (can swap for gf self raising flour)
125g caster sugar
3/4 tsp bicarb
40g golden syrup
60ml vegetable oil
200ml soya milk (can use oat or almond)
Raspberry flavoring
For the icing
200g dairy free butter block
400g icing sugar
1/4 tsp lemon extract
Purple, yellow and Orange gel food coloring

step 1. Add your golden syrup, vegetable oil, soya milk and raspberry flavoring into a jug and mix.
step 2. Add this mixture in slowly in with the flour, making sure to combine the ingredients evenly.
step 3. Place your paper cupcake liners into your tray and transfer your cupcake batter evenly into each liner.
step 4. Add your cupcakes into the oven at 350°F (175°C) for 18-20 minutes.
Step 5. Mix the dairy free butter, icing sugar and lemon extract into a bowl and mix until smooth.
Step 6. Separate your icing mix into 3 bowls then add in different food colorings to each and mix.
Step 7. Once your cupcakes have cooled, pipe or spread your icing mix over the cupcakes. For pastel piped icing, spread the 3 colors evenly in cling film and twist at each side creating a tube of icing. Cut one end of the cling film and create a piping bag.
Step 8. Add on your Freedom Gummies to your own designs and enjoy!
