Red Velvet S’mores Cookie Bar

These vegan red velvet s’mores cookie bars are the ultimate gooey treat – thick red velvet cookie dough, melty Freedom Confectionery Micro Pink Marshmallows, and crunchy biscuit pieces baked into one irresistible traybake. Perfect for parties, gifting, or cosy nights in. Warm them for 30 seconds to bring the marshmallow centre back to its soft, gooey best!
Ingredients
- 460g plain flour
- 200g soft brown sugar
- 180g white sugar
- 8g baking powder
- 4g baking soda
- 20g cocoa powder
- 1 tsp vanilla powder
- 200g vegan butter
- 80g cold water
- 150g vegan chocolate chips
- 150g Freedom Confectionery Micro Pink Marshmallows (+ extra for topping)
- 100g crushed biscuits (+ extra)
- ½ tsp red gel food colouring
How to Make Red Velvet S’mores Bars
- Preheat oven to 180°C and line a 7″ × 11″ tin.
- Cream butter and sugars until smooth and fluffy.
- Mix in red food colouring.
- Add flour, cocoa, baking powder, baking soda, vanilla powder and water to form a thick dough.
- Knead in chocolate chips.
- Press half the dough into the tin.
- Add Freedom Confectionery marshmallows and biscuit crumbs.
- Flatten pieces of the remaining dough to cover the top.
- Bake for around 20 minutes until the top is set with a slight jiggle underneath.
- Cool, slice, and enjoy warm for maximum gooeyness.
Tips for Perfect Cookie Bars
- Freedom Confectionery micro and mini marshmallows melt beautifully and give the bars their signature gooey centre.
- Micro and mini marshmallows work best, but larger ones can be chopped if needed.
