S’mores Vegan Cookies

S’mores Cookies – Vegan 🌱@megsbakesncakesF
I was very kindly gifted some vegan mallows from @freedomconfectionery! The perfect additions to my s’mores cookies – crumbly cookies filled with biscuit crumbs, melted chocolate and gooey marshmallows.
-In a bowl, cream 250g butter with 200g brown sugar
-Add 2 tsp vanilla, 400g plain flour, 1 tsp baking powder, 1/2 tsp salt and 1/2 tsp cornflour
-Stir in 1/3 cup milk until well combined
-Add 100g dark chocolate chips, 100g mini marshmallows and 100g chopped digestives
-Separate the dough into 12 equal pieces
-Freeze for 30-60 minutes before baking at 180C for 12-15
mins
-Press a piece of chocolate and a marshmallow into each cookie as soon as they are out from the oven
-Allow to fully cool before eating
