Looking for a fun, family-friendly activity this Easter? These Vegan Bunny Lollies are the perfect solution! Thereās absolutely no baking involved, making them a fantastic project for little hands (and big appetites).
Using our fluffy, plant-based marshmallows and golden sandwich cookies, these adorable treats are as delicious as they are cute. Whether youāre prepping for an Easter egg hunt or just want a sweet springtime snack, these lollies are sure to be a “hop-away” success!
Makes: 6 Bunny Lollies
Prep time: 20 minutes (plus setting time)
Skill level: Super Easy/Kid-Friendly
6 Vegan golden sandwich cookies
50g Vegan white chocolate
6 Freedom Confectionery VeganticsĀ
6 Food-safe lollypop sticks
Optional: Vegan sprinkles or a little melted dark chocolate for the faces
Baking paper & a small tray
Small microwave-safe bowl
Scissors & a spoon
Melt & Prep: In a small microwaveable bowl, melt your vegan white chocolate in 15-second bursts, stirring in between until smooth.
Stick & Stay: Use a knife to carefully split each sandwich cookie in half. Place a small blob of melted chocolate on the cream filling, press a lollypop stick into it, and pop the top half of the cookie back on. Youāve now “glued” your stick inside!
Chill: Place your cookie pops on a tray lined with baking paper and pop them in the fridge for 5 minutes to set the chocolate “glue.”
Craft the Ears: While the cookies chill, take your Freedom Confectionery Vegantics. Use clean scissors to cut each marshmallow lengthwise into two long strips. Pinch one end of each strip to create a pointed “bunny ear” shape.
Assemble: Take the cookies out of the fridge. Dip the flat bottom of your marshmallow ears into the melted chocolate and press them onto the top of the cookie.
Decorate: Spoon a thin layer of white chocolate over the front of the cookie to create a clean “face.” Before it sets, add a sprinkle for a nose or use a toothpick dipped in dark chocolate to dot on eyes and whiskers.
Final Set: Return the tray to the fridge until the chocolate is firm and the ears are securely attached.
The Perfect Ear: Because Freedom Confectionery marshmallows are so pillowy and soft, they are very easy to shape! If the scissors get sticky, dip them in a little icing sugar between cuts.
