Rocky Road Cookies

Veganuary recipes- @tasteswithtay got you! (CONTAINS NUTS)

ROCKY ROAD COOKIES 🍪 all the deliciousness of a rocky road (chocolate, marshmallows, nuts) but in the form of a cookie.

Ingredients:

• 1 cup almond flour
• 1/2 cup oat flour
• 1 tsp baking powder
• 1/3 cup cocoa powder
• 1/2 cup coconut sugar
• 1/3 cup creamy nut butter (I used peanut butter)
• 3/4 cup dairy free milk
• 1/3 cup walnuts, chopped (or any nut)
• 1/3 cup chocolate chips or chunks
• Mini marshmallows to top the cookies

Directions:

1. Preheat the oven to gas mark 180 and line two baking sheets with parchment paper.
2. In a bowl add the almond flour, oat flour, baking powder, cocoa powder, peanut butter, and milk. Mix until a thick dough forms.
3. Fold in the walnuts and chocolate. Scoop into 12 cookies and place on the baking sheets. Press marshmallows into the top of the cookies and bake for 12-15 minutes.
4. Enjoy!
